Here's a great marinade from a Mexican friend of mine. For every 12oz. can of beer append 1/3cp white vinegar, 1 tablespoon salt, 1 clove crushed garlic clove, a small chopped hot pepper( unrestricted according to taste), and a sprig of freshly copped cilantro. He marinated chicken in this mixture for at most minuscule 4 hours, overnight is better! We eat this chicken near roasted Italian peppers( they look like a banana pepper, but are a touch hot) rapped within tortillas. I've had some great times intake these down at the beach beside a beer! Sauté 4 cloves chopped garlic and 2 sliced yellow onions within 2 tablespoons olive oil over milieu heat. Cook until soft, going on for 5 minutes. add 2 chopped tomatoes, 1 cup ketchup, 2/3 cup tomato liquid, 1/2 cup each of cider vinegar, red wine vinegar, and Worcestershire sauce, 1/4 cup respectively of brown sugar, dark molasses, and honey, 2 tablespoons respectively of tomato paste and mustard, 1 tablespoon respectively of liquid smoke flavoring, chili powder, and ground cumin, 2 teaspoons hot pepper sauce, 1 teaspoon ground red pepper, 1 1/2 teaspoons red pepper flakes, cook over low for 2 hours. puree this mixture and strain through a colander.

Wash and dry complete bird. Rub with a mixture of 2 1/2 teaspoons brackish, 1/2 teaspoon pepper, 1 clove minced garlic, 1 teaspoon paprika. Secure the bird in a truss and place on spit. Cook on the rotisserie in the order of 2 hours, or until the bird reach 165 degree at it's center.

One entry that I like to do is to par-cook wedge of white potatoes with the skins on later toss in a bowl near olive oil and kosher saline then a short time ago place on the BBQ and turn wedges so that adjectives sides are browned and branded by the grill. It's like BBQ french fries, My kids love them.
