A favorite route to grill pork chops within our house is:

Cris-cross two slices of bacon. Lay a boneless center cut chop surrounded by the center. Salt and pepper it. I also close to to put some ground chipotle on for spice. Slice an onion closely and lay over the pork, slice a tomato and lay lying on the onion, put a big chunk of green pepper resting on the onion. Wrap the bacon around and in safe hands near toothpicks. Grill over indirect steam until pork and bacon is cooked. Melt some cheese over the top and serve! You can also marinade the pork first if you need.
