7 course spread? recipe? husbands home after 2 weeks gone want to surprise him?

Hi, my husband is coming home from being at his annual 2 week army national guard training week and I want to take home a really nice meal for him. We love veggies, and I will solely draw the line at fish as I other screw them up when cooking(I have 2 little ones and a dog underfoot) I enjoy a crock pot the size for 4-6 people servings or so, adjectives the regular pans, a convection oven and a regular oven, I own corning ware but no glass dishes, no corn please as a majority ingredient my 2 year matured has arranged corn is the devil and picks every piece out before continuing her meal(it can be a minor ingredient though after adjectives parents are SUPPOSED to challenge their children lol) I do not enjoy a grill I do have a coil top cooktop(we lately have not replaced it but ick) I have room surrounded by my fridge for platters by the way. Looking for 5-7 courses that progress together and will keep for 1 hour-2 hours on heat or in oven or fridge from time they are prepared to when they are eat thank you for your help also

Here is a pretty interantional menu i.e. really pretty easy:
First Course: pita chips near hommus
Second Course: gazpacho
Third Course: avocado, oranges and red onions, sliced thin, layered and topped beside a raspberry vinagrette
Fourth Course:

Shrimp and Orzo with Feta
1 1/2 lbs red shrimp, peeled and deveined
2 cups rare orzo pasta
2 cups feta cheese, crumbled
1 1/2 cups shredded parmesan cheese
6 thinly sliced roma tomatoes
1 1/2 cups green bell pepper, medium dice
1 1/2 cups onions, atmosphere dice
3 tablespoons olive oil, plus
2 tablespoons olive grease
1 1/2 cups heavy cream
3 tablespoons chopped basil
3/4 teaspoon black pepper
3 tablespoons finely chopped garlic
6 cups hot low sodium chicken broth

Preheat oven to 350 degree.
Butter a 13X9 dish.
Have stock heating surrounded by a sauce pan on prevailing conditions heat.
Spread the delicately sliced tomato on several paper towels, consequently lay several other paper towels on top and press delicately. Hold off to the side for subsequently.

Turn the steam down to medium. Add the black pepper and basil.
Stir surrounded by crumbled feta; let it start to liquefy (smash larger pieces with wooden spoon.) Add cream and stir adjectives together for about two minutes.
Spread 2 cups of the orzo mixture contained by the bottom of your buttered dish.
Lay half of your tomato slices contained by a single layer over the orzo mixture.
Lay partially of the shrimp in a single division over the tomato slices.
Spoon 2 cups of the orzo mixture over the shrimp.
Spoon the green pepper/onion mixture over the layer of orzo.
Lay the rest of the shrimp over the green pepper/onion mixture.
Spoon the end 2 cups of the orzo over the shrimp.
With the second half of your tomato slices put a single band over the orzo.
Place the uncovered dish in the preheated oven.
Bake at 350 degree for 25 minutes.
After the twenty five minutes, sprinkle the parmesan cheese over the top of the tomatoes and place back contained by the oven for another five minutes
Fifth Course: Lemon Meringue Pie
Sixth: Coffee and ginger cookies
