Does anyone know how to net chicken gizzards resembling you carry at some chicken restaurants?

I love chicken gizzards, especially the ones from like Lee's Chicken and other places. They are soo tender and sharp. I am also looking for a recipe for chicken gizzards in red wine sauce. I have it years ago and never got the recipe. You couldn't really drink the wine all that much, but they sure be good. Any assist on this will be appreciated!

Country Fried Chicken Gizzards

Ingredients:
1-1/2 pound chicken gizzards
1/2 cup all purpose flour
1-1/2 tablespoon seasoning brackish ( I use Creole seasoning)
vegetable oil

First you want to prep gizzards for cooking. Remove gizzards from container and discard chicken heart if they're present. Cut away excessive fat and gristle, next wash gizzards thoroughly below running cold water.

Next it's time for the most crucial step...parboiling the gizzards before frying them. Place gizzards within a pot of cold water, bring marine to a rolling boil and continue to boil for roughly speaking 15 minutes.

While the gizzards are boiling, prepare coating mixture for the gizzards. Combine flour and seasoning salt contained by a paper or plastic backpack. Shake well and set seasoned flour mixture aside.

Once finished boiling, pour gizzards into a strainer or verbs sink and allow to cool.

Preheat enough vegetable grease to cover gizzards in a milieu hard botton or pattern iron skillet (with lid) over medium-high heat.

Thoroughly coat gizzards near seasoned flour mixture and place into hot vegetable oil. Don't overcrowd the skillet. Cook gizzards on both sides until brown.

Turn down the warmness to medium, consequently cover skillet with lid and cook for an more 10 minutes. Once done remove from skillet and allow to drain on paper towels.
Simply take a chicken, gouge out it's gizzards, bake, afterwards drown in red wine. It's as trouble-free as that.
