I'm a vegetarian! If you are the type of lacto-vegetarian that eats fish, try tuna salad. It's moral if you put the right amount of mayo. Too much= BAD.
Cucumbers and cream cheese, I love that. My mom's specialty sandwich is cold beans, tomatoes and onions in toasted bread next to some salt and pepper...

Tofu, bean sprouts, cream cheese would adjectives make biddable fillings, as would peanut butter and jelly.
I love roasted vegetables or lettuce, tomato, daintily sliced cucumber and a bunch of mung bean sprouts in a together wheat pita. I'm not a vegetarian but I do guzzle vegetarian lunches because my guy is not around to complain nearly the lack of meat! :o)

take some veggie dogs (Morning star within the pack work, but the canned sympathetic are better)...and smash them all up..afterwards add mayo (or vegannaise), relish, I don`t know a little mustard.
It make a really good spread! (that is if you similar to veggie dogs..which i do)
sprouts, tomato, red pepper, green pepper, and hummus. (works best in pita pocket breads)
Avacado!
Grill up some bell pepper, zucchini, red onions, and tofu. Top with sprouts of choice and conceivably a touch of balsamic vinaigrette.
