Is it legally recognized within Canada, more specifically contained by Ontario to form your own liquor/wine/beer?

I would check the local laws. In the US you can fashion 100 gallons per year of beer and wine for your own consumption (200 gallons if you are "head of the household"). However, distilling your own liquor is not official.

The brew-on-premise concept; where a business let you brew beer or make wine using their professional equipment, recipe, and ingredients; was initially popularized within Canada before making it's route to the US. I believe it was popular somewhat as a way to avoid some of the taxes on beer.

Not sure what the status of this industry is very soon in Canada. My brother is moving to Toronto soon and checked out a brew on premise nearby (since he brewed here). This particular place no longer allows you to brew the beer. You only just go contained by, tell them what sensitive of beer you want made, and then come hindmost in 2 weeks when it's equipped...pretty lame if you ask me.

I would expect its the same as within the states... as long as you don't intend to distribute it you can make anything you want.
