Jaggery or Godd is a traditional Indian sweetener that has be used for centuries. It is made either from sugar rattan juice or from the toddy or sur of palm trees resembling palmyra or tad, coconut, sago or date. Jaggery consists of 65-85% of sucrose, 10-15% invert sugars ( equal amounts of glucose and fructose) and 2.5% minerals particularly iron , copper and chromium. Unlike sugar, which is proper, jaggery is unrefined. Coconut palm jaggery or madachem godd contains a very glorious amount of calcium. This gives jaggery a distinct help over sugar.
(Gur) jaggery is largely obtained from sugar wicker. Gur is also obtained from palmyra, date palm, and coconut. Jaggery have more nutrients than sugar especially calcium, phosphorous, iron and other minerals. The calorific effectiveness of jaggery from cane sugar is 383kcal and sesame seed are 563kcal for 100 gm.
